A healthy soil is one that has balanced level of carbon and nitrogen. Most culivated soil has literally has had its goodness, its organic life, ripped or burned out of it. Soil organic matter is a stong proxy for soil carbon. And organic matter in the soil feeds all of God's good critters that make a soil productive. Good soil makes for healthy foods. And we are what we eat.
